  • I hate pastry, doghnuts, crust, tarts, scones, croissants - all of them, can't stand them.  So on Thanksgiving when the dessert of day is Pumpkin Pie, I cringe.  Not what I want. No chocolate involved.  Having said that I like the filling of pies, especially pumpkin. 

    I came across this recipe on the Spark website.  Pumpkin Granola Parfaits.  Thought I would try it given Turkey Day is just around the corner. I loved it.  Perfect amount of creaminess to the yogurt  and the pumpkin with the spice. MMMMMmmmmmmm.   I use a quinoa granola that happens to be gluten free - it has buckwheat, almond, figs, pumpkin and sunflower seeds, flax, cranberries - yum. I keep it in the fridge so the dried fruit gets chewy. It was a great post workout snack tonight.  Not that I really worked out like the 15 gals that sweated and rocked it, but I did power up a hill. Thanks to those in the front that let me be in the lead if nothing but to 'massage my ego'.  

  • If you want a little pumpkin flavour this weekend, but not the fat and calories of the traditional pumpkin pie, give this a try. I opted to use the photo online, because mine sucked. I will share it too.......just to prove it!! I am not the photographer in the family. 
    Recipe 

    1/2 cup canned pumpkin
    1/2 teaspoon pumpkin spice
    1 cup low-fat (or fat free) vanilla yogurt
    1/2 cup low-fat granola
     
    Layer ingredients in a parfait glass - ENJOY
